Ingredients:
4 cups desiccated coconut 1/4 cup butter 1/2 cup sugar 4 egg yolks 1/2 cup condensed milk 4 egg whites 1/2 cup sugar 1 tsp. vanilla melted butter for brushing   Procedure:   1. Pre-heat the oven to 350F/180C. Prepare muffin trays with cupcake cases. 2. Soften the butter by using hand mixer then add the sugar and egg yolks. Mix it well. 3. Add condensed milk, vanilla and desiccated coconut. Set aside. 4. In a separate bowl, beat the egg whites till soft peaks then gradually add the remaining sugar till you reach peak stage. 5. Fold in the egg whites in coconut mixture. 6. Scoop the mixture into the prepared muffin trays and bake it for 20-25 min. or until golden brown. Brush melted butter on top before serving. Enjoy!
