Coconut Chicken
This chicken recipe is for everyone out there who gets unbelievably bored eating plain old chicken day in and day out but can’t be bothered with making anything too fancy for dinner. It’s full of flavours from coconut milk and lemon grass.

- 1 kg. Chicken Thigh fillet
- Salt and Pepper to tase
- 1 cup Water
- 1 tsp. Sinigang Mix
- 2 stalks Tanglad pounded
- 1 cup Kakang Gata
- 1/2 cup Pineapple Tidbits with syrup
Season chicken with salt and pepper. Grill or fry and set aside.
Mix all ingredients for sauce, including pineapple tidbits with syrup. Cook over medium heat until sauce thickens.
Transfer the grilled chicken into the sauce and simmer for 2 minutes. Ready to serve. Enjoy!
