Kalderetang Hipon
Caldereta or Kaldereta has different variations using beef, pork, chicken and seafood. It is meat stewed in vegetables and liver spread. Plus, a touch of heat and saltiness from the cheese.

- 1 kg. King Prawns deveined
- 3/4 cup Tomato Sauce
- 1 1/2 cups Water
- 1 pc. Onion chopped
- 4 - 5 cloves garlic minced
- 1 pc. Tomato sliced
- 2 tbsp. Soy sauce adjust according to your taste
- 1/2 tsp. Pepper
- 1 can Liver spread
- 1/2 cup Pitted Olives or more
- 1/2 grated Cheddar cheese
- Bell pepper sliced into strips
- Oil for sautéing
- 1 tbsp. Cornstarch dissolved in 2 tbsp. water to thicken the sauce optional
- Carrots/Potatoes optional

Pre-heat oil in a pan. Sauté garlic and onions till soft and translucent.
Add tomato sauce, water, liver spread and grated cheese. Simmer till the sauce thickens a bit.
Season with soy sauce and pepper according to your taste.
Add shrimps, pitted olives and bell pepper. Let it simmer for 5 minutes. Add cornstarch slurry to thicken the sauce. Simmer for another 2 - 3 minutes. Remove from the heat and ready to serve. Enjoy it with rice.
