Kalderetang Hipon

Caldereta or Kaldereta has different variations using beef, pork, chicken and seafood. It is meat stewed in vegetables and liver spread. Plus, a touch of heat and saltiness from the cheese.

Ingredients

  • 1 kg. King Prawns deveined
  • 3/4 cup Tomato Sauce
  • 1 1/2 cups Water
  • 1 pc. Onion chopped
  • 4 - 5 cloves garlic minced
  • 1 pc. Tomato sliced
  • 2 tbsp. Soy sauce adjust according to your taste
  • 1/2 tsp. Pepper
  • 1 can Liver spread
  • 1/2 cup Pitted Olives or more
  • 1/2 grated Cheddar cheese
  • Bell pepper sliced into strips
  • Oil for sautéing
  • 1 tbsp. Cornstarch dissolved in 2 tbsp. water to thicken the sauce optional
  • Carrots/Potatoes optional

Instructions

  • Pre-heat oil in a pan. Sauté garlic and onions till soft and translucent.
  • Add tomato sauce, water, liver spread and grated cheese. Simmer till the sauce thickens a bit.
  • Season with soy sauce and pepper according to your taste.
  • Add shrimps, pitted olives and bell pepper. Let it simmer for 5 minutes. Add cornstarch slurry to thicken the sauce. Simmer for another 2 - 3 minutes. Remove from the heat and ready to serve. Enjoy it with rice.
