Sisig

Aling Oday’s version of Sizzling Pork Sisig. Sisig is a Filipino dish made from parts of pig head and chicken liver, usually seasoned with calamansi, onions and chili peppers. It originates from the region of Pampanga in the island of Luzon. Sisig is a staple of Kapampangan cuisine. Perfect for main dish or as appetizer. This video is a remake of my old Sisig video uploaded several years ago for a better video quality.

Ingredients

  • 1 kg pork ears & face
  • 1/4 kg pork belly
  • 1/4 kg chicken liver
  • 3/4 – 1 cup lemon juice
  • 1/4 cup butter
  • 2 onion finely chopped
  • 6 cloves garlic mince
  • 1 1/2 tsp. mince ginger
  • 3 chilli pepper adjust according to your taste
  • 1 tsp. pepper corn
  • salt & pepper to taste
  • 2-3 tbsp. mayonnaise optional
