Combine sugar and water in a sauce pan and place it over a low-medium heat to lightly caramelize. Turn the sauce in circular motion once in a while so the sugar will not burn.
Combine double cream, salt and vanilla, mix it well and set aside.
Remove from the heat once the sugar is lightly caramelized, then add the butter and double cream mixture. Mix it well until the caramel is smooth. Transfer in a jar and ready to use as cake or donut toppings. Enjoy!
