Special Palabok

Ingredients:

300g mince pork

10-12 cups shrimp broth (or water + 2 shrimp cubes)

mix sea foods, sautéed

1 medium onion, chopped

6-8 cloves garlic

1 tbsp. anatto seed powder dissolved in 1 tbsp. oil

8-10 tbsp. corn starch dissolved in water (1:2 ratio)

Palabok noodles

Garnishing:

shredded tinapa

chicharon, crashed

spring onions, chopped

fried mince garlic

boiled eggs, sliced

mix sea foods, sautéed

lemon or calamansi

Procedure:

1. Sauté garlic and onion on a heated pan with oil till tender. Add mince pork and continue to cook till golden brown.

2. Pour shrimp broth and season with salt & pepper according to your taste. Bring to boil then add anatto powder.

3. Pour the corn starch mixture slowly while stirring at the same time. Adjust sauce thickness according to your desired thickness.

4. Add the half of the sautéed mixed seafoods. Keep the other half for toppings. Bring to boil then turn off the heat.

5. In a big sauce pan, boil water and cook the palabok noodles for about 10 minutes depending on the brand of the palabok noodles. Check the tenderness of the noodle from time to time to avoid overcooking. Drain the water once cooked.

6. Place desire amount of noodles in a plate and pour sauce on top and garnish it with the toppings. Enjoy!
