Chicken Lumpianada with Cheese Sauce

1/2 kg. Chicken, boiled & shredded
1/4 cup Raisins
1 1/2 cup Mixed Vegetables
1 cup Potato, diced
1 Chicken cube (optional)
1 pc. Onion, sliced
5 – 6 cloves Garlic, minced
3/4 cup Chicken Broth
2 tbsp. Soy Sauce
Salt and Pepper to taste
4 pcs. Boiled Eggs slices
1/2 cup Grated Cheddar Cheese
Lumpia Wrappers
Oil for sautéing and frying
Cheese Sauce:
1 cup All Purpose Cream
1/2 cup grated Cheddar Cheese
2 tbsp. Cheese Powder
Pinch of Salt
  1. Pre-heat pan with oil and when it’s hot enough, saute the garlic and onion till the onion is soft and translucent.
  2. Add in the potato and mix well for a few minutes then add in the mixed vegetables and raisins and the chicken broth, soy sauce, salt and pepper to taste. Then continue cooking till the potato is cooked.
  3. Add the cooked chicken, mix well till it dries up. Let it cool down and set aside.
  4. Wrap the cooled down filling in lumpia wrapper and seal the edges with beaten egg.
  5. Pre-heat pan with oil for frying. Fry the lumpianada till golden brown, transfer in a plate lined with paper towel to absorb the excess oil.
  6. For the sauce, combine all ingredients together. Place under medium heat, stir continously until it thickens.
