Chicken Afritada


1 kg chicken portions

2 medium potatoes, pealed and cut into quarter

1 large carrot, sliced diagonally

1 large bell pepper, sliced into strips

1 cup green peas

1 cup tomato sauce

4-5 cloves garlic, minced

1 medium onion, chopped

1-2 medium size tomato, sliced

1 1/2 cups chicken broth or stock or water

2 pieces dried bay leaves

2 tsp paprika

cooking oil for sautéing

Salt and ground black pepper to taste

chicken cube (optional)

hotdogs, sliced diagonally (optional)


1. Heat oil in a pan. Sauté garlic, onion and tomato. Add the chicken portions and sauté till golden brown. Add paprika and bay leaves.

2. Pour tomato sauce, broth/water and chicken cubes. Simmer till the chicken is almost cooked.

3. Add potato, carrots & green beans. Season with salt and pepper according to your taste. Continue to simmer till the potato and carrots are tender. Then add the bell pepper and and the optional hotdogs.

4. Continue to simmer for a few more minutes. Remove from the heat and serve with boiled rice.
