Creamy Chicken Casserole

Aling Oday's quick and easy Creamy Chicken Casserole. It can be serve with mashed potato or garlic bread and use it as pasta sauce.

  • 1/4 cup butter
  • 1 medium onion dice
  • 2 pcs chorizo cubes
  • 2 tbsp all purpose flour
  • 2 pcs hotdogs or ham cubes
  • 1/3 cup mushroom, slice
  • 1 cup chicken broth
  • salt and peper to taste
  • 1 pc chicken cube
  • 2 cups milk
  • 3 cups shredded chicken
  • 1 1/2 cups frozen vegetables
  • chopped parsley

For the mashed Potato

  • 4-5 big potato, boiled and mashed
  • 1/4 cup butter
  • 2-3 tbsp milk
  1. Melt butter and sauté onion till soft. Add chopped chorizos, chicken cubes and flour. Cook it well.

  2. Add hotdogs, mushrooms, mixed vegetables, milk and chicken broth. Season with salt and pepper to taste. Simmer till it starts to boil.

  3. Add shredded chicken and continue to simmer till the sauce thickens. Remove from the heat.

  4. For the mashed potato, add the butter and milk in mashed potato. Mix it well.

  5. Serve the chicken casserole with mashed potato on side or use it as a sauce for pasta. Enjoy!
