1kg Boneless Chicken breast or thigh, cut into 1 inch cubes
Salt and pepper to taste
1 tbsp. Soy sauce
5 – 6 tbsp. Corn starch
Oil for frying
1/4 cup Lemon juice
1 Lemon, sliced
1 cup Chicken Stock or water
2 tbsp. Honey
1 tbsp. Sugar
1 tbsp. Corn starch + 2 tbsp. Water
1) Marinate the chicken in salt, pepper, egg, soy sauce. Mix it well. Add corn starch and mix it well. Set aside.
2) Pre-heat pan with oil. Deep fry the marinated chicken and set aside.
3) In a separate sauce pan, combine chicken stock, sugar, honey, lemon and lemon slices. Simmer for 2 minutes. Adjust sweetness using sugar or honey according to your taste if the sauce is too sour. Slowly add the slurry of corn starch and water to thicken the sauce.
4) Once thickened, add the fried chicken slices and garnish with toasted sesame seed or chopped spring onions. Ready to serve and enjoy,
