Sweet and Sour Chicken

Ingredients:

1kg Boneless Chicken breast or thigh, cut into 1 inch cubes

Salt and pepper to taste

1 tbsp. Soy sauce

5 – 6 tbsp. Corn starch

1 Egg

Oil for frying and sautéing

Red bell pepper, cut into square

Sweet and Sour Sauce:

1 cup Chicken Stock or water

2 tbsp. Honey

1 – 2 tbsp. Sugar

1/2 – 3/4 cup Pineapple chunks

1/2 cup Pineapple syrup

1/4 cup Ketchup

1/4 cup Vinegar

2 tbsp. Corn starch + 4 tbsp. Water

Procedure:

1) Marinate the chicken in salt, pepper, egg, soy sauce. Mix it well. Add corn starch and mix it well. Set aside.

2) Pre-heat pan with oil. Deep fry the marinated chicken and set aside.

3) In a separate pre-heated pan with oil, sauté onion until soft then add chicken stock and vinegar. Simmer until it boils for a few minutes. Add sugar, honey, ketchup, pineapple syrup, pineapple chunks and bell pepper. Adjust sweetness using sugar or honey according to your taste if the sauce is too sour. Slowly add the slurry of corn starch and water to thicken the sauce.

4) Once thickened, add the fried chicken slices, mix it well and ready to serve and enjoy!
