Ingredients:

1 Whole Chicken

1 L Pineapple juice

3/4 cup Sugar

1 tsp. Pepper

5 – 6 cloves Garlic, minced

1/3 cup Oyster Sauce

1/3 cup Soy Sauce

1 cup Water

Stuffing:

1 pc, Apple, sliced

1 small Carrot, sliced

1 pc. Onions, sliced

1/2 pc. Bell pepper

2 pcs. Star anis

Sauce:

2 cups Marinade mixture

2 tbsp. Butter

4 – 5 cloves Garlic, minced

1 small Onion, sliced

Pepper to taste

Sugar (adjust according to your  taste)

1 tbsp. Oyster Sauce

1 small can Pineapple chunks with syrup

1 tbsp. Sesame Oil (optional)

2 tbsp. Cornstarch dissolved in 4 tbsp. Water (optional)

Procedure:

1) Prepare the marinade – in a bowl, combine all the ingredients for marinade EXCEPT water. Marinate the prepared chicken overnight in the fridge.

2) Remove the chicken from marinade. Insert all the stuffing inside the chicken. Transfer the marinade in steamer pan and add about 1 cup of water. Transfer the chicken in steamer. Steam on a low heat for a minimum of 1 1/2 hour depending on the size of the chicken.

3) After steaming, remove the marinade mixture from the steamer pan for the sauce. Pre-heat pan with butter. Sauté garlic and onion till soft and translucent. Add the marinade mixture. Add pineapple chunks, season with pepper to taste, oyster sauce and sugar (adjust sweetness according to your taste) and sesame oil. Simmer till the sauce thickens. You can add corn starch slurry to thicken the sauce.

4) Transfer the chicken in a platter, pour the sauce and ready to serve. Enjoy!
