Chocolate Cream Cheese Bundt cake
Ingredients:
1 3/4 cup Plain flour
2 cups Sugar
3/4 cup Cocoa Powder
1 1/2 tsp Baking soda
1 1/2 tsp Baking powder
1 tsp Salt
1 cup Buttermilk
1/2 cup Oil
2 Eggs
2 tsp. Vanilla
Cream Cheese Filling:
200g Cream cheese, softened
4 tbsp. Butter, softened
1/2 cup Sugar
1 Egg
2 tbsp. Plain flour
1 tsp. Vanilla
Cream Cheese Frosting:
2-4 tbsp. Powdered sugar or icing sugar
300ml Whipping cream
200g Cream Cheese, softened
1 tsp of Vanilla Extract
Procedure:
1) Pre-heat the oven to 350F (175C). Prepare 10 inch round bundt pan, greased and dusted with flour.
2) Sift all dry ingredients and mix it together.
3) Combine all liquid ingredients together. Make a well in the centre of the dry ingredients and add the liquid ingredients.
4) Mix well using a wire whisk or hand mixer until well blended. Set aside.
5) Prepare cream cheese filling. Using a mixer, beat cream cheese, butter, and sugar until light and fluffy, about 2 minutes. Add egg, flour, and vanilla and continue beating until smooth. Set aside.
6) Pour the 1/4 of the chocolate cake batter in prepared bundt pan. Then add the cream cheese filling. Lastly add all the remaining cake batter. Bake for 55 to 60 minutes, until center is set and a toothpick inserted comes out clean. Allow cake to cool completely (in bundt pan) before inverting onto cake plate.
7) While cake cools, prepare icing. Beat powdered sugar, cream cheese, heavy cream, and vanilla extract for 2 minutes, until well combined. Place in a piping bag and pipe on to top of cooled cake. Serve immediately, and store leftovers in the refrigerator. Enjoy!
