For the Chocolate Cake:
1) Pre-heat the oven to 350F (175C). Prepare 4 to 5 pieces 5 inch round tin, greased and lined with parchment paper.
2) Sift all dry ingredients and mix it together.
3) Combine all liquid ingredients together. Make a well in the centre of the dry ingredients and add the liquid ingredients.
4) Mix well using a wire whisk or hand mixer until well blended. Mix it well.
5) Transfer on the prepared tin and bake for 30 minutes. After baking, let it cool down completely.
For the Ganache: In a small saucepan over low heat, heat double cream. Place chocolate in a heat-proof bowl and pour over hot heavy cream. Let sit 3 minutes, then stir until creamy and no lumps remain. Add butter and mix it well. Set aside.
For the Chocolate Fudge: Transfer the evaporated milk in a pan and simmer till it is about to boil. Add chocolate chips and mix it well until the chocolate melts. Slowly add the cornstarch slurry while mixing it at the same time until the fudge thickens like a custard.
To assemble:
pour the fudge on top of the cake. Pour the chocolate ganache on top. Sift the cocoa powder on top. Refrigerate for at least 1 hour. Enjoy your dream chocolate cake!
