Adobo sa Kamatis

1/2 kg Pork Belly, sliced
1 pc. Onion, chopped
4 cloves Garlic, lightly crashed
3 pcs. Tomatoes, sliced
1/3 cup Vinegar
1/3 cup Soy Sauce
2-3 pcs. Bay Leaves
1 1/2 cups Water
Pepper to taste
1 tbsp. Sugar (optional)
Oil for sautéing
  1. Render the pork belly till light brown.
  2. Add a little bit of oil, sauté garlic and onion. Add tomatoes and mix it well.
  3. Add vinegar and soy sauce and simmer for about 2 minutes.
  4. Add water, sugar and bay leaves. Season with pepper to taste. Simmer on a low heat for 30 minutes or till the pork is tender.
  5. Transfer in a platter ready and serve with rice. Enjoy!
