Description

Crispy Breaded Pork Chops with Curry Sauce. This is very crispy on the outside but juicy inside. Best serve with rice for lunch or dinner.

Ingredients

4 pcs. Pork Loin or Pork Chop, sliced thinly
Salt and Pepper to taste
Oil for frying
Breading:
1/4 cup Potato or Corn Starch
1/4 cup Glutinous Rice Flour
1/2 tbsp. Curry Powder
1 tsp. Paprika Powder
1/2 cup cold Water
1/4 cup All Purpose Flour
1 1/2 cups Panko Breadcrumbs
Curry Sauce:
1 1/2 cup Water
1/2 pc. Onion, finely chopped
4 cloves Garlic, minced
1/4 tsp. Cummin Powder
1/4 tsp. Coriander Powder
1/2 tsp. Turmeric Powder
1/2 tbsp. Curry Powder
Salt and Pepper to taste
Oil for sautéing
1 1/2 tbsp. Cornstarch dissolved in 3 tbsp. Water

Instructions

  1. Slice the pork loin/pork chop thinly. Pound it using the back of the knife. Season with salt and pepper to taste. Set aside.
  2. Breading: combine all ingredients in a bowl Except for the panko breadcrumbs and all purpose flour. Mix it well and set aside. Dredge the pork loin in all purpose flour and dip it in the breading mixture. Deep fry in pre-heated oil on low heat till golden brown.
  3. For the sauce: combine all ingredients in a sauce pan except for the corn starch slurry. Let it simmer to boil then add the corn starch slurry to thicken the sauce. Ready to serve.
