Pork Roll with Spinach and Cream Cheese

1kg Whole Pork Loin
100g Cream Cheese
2 cups Spinach, chopped
1 cup Button Mushroom, chopped
1/2 cup Nuts, chopped
1 pc. White Onion, diced
5 – 6 Cloves Garlic, Minced
1 tbsp. Oil
Salt and Pepper to taste
  1. Sauté onion and garlic until fragrant.Add in mushrooms and cook until lightly whilted.
  2. Place mixture in a mixing bowl then add in chopped spinach.
  3. Fold in cream cheese and cashew nuts.
  4. Pound or slice through the middle the pork loin to 1/2 inch thick. Season with salt and pepper.
  5. Spread spinach mixture then roll. Secure with kitchen twine.
  6. Pre-heat oven to 180C and roast at 45 – 60 minutes.
  7. Rest the pork before carving. Best served with buttered vegetables, mashed or roast potatoes. Enjoy!
