Pork Ribs Nilaga

Ingredients:

1.5 kg Pork Ribs, sliced

7 – 8 cups Water

1 whole Garlic, skin removed

1 Onion, sliced

1/2 tbsp. Whole peppercorn

1/2 tbsp. Minced ginger

2 bunches of Petchay

2 Sweet corn, cut in 3

1 Pork cube (optional)

Salt or fish sauce to taste

Procedure:

1) Place the pork ribs in big pot or pressure cooker. Add water, whole garlic, onion, peppercorn, minced ginger and pork cube (optional). Cover the pot and let it simmer for 45-60 minutes if you are using an ordinary pot. For pressure cooker, once the pressure cooker whistles, start the timer for 30 minutes. Note: use pressure cooker according to the manufacturer’s manual when releasing the heat.

2) Once the ribs is tender, add sweet corn and season with salt and adjust to your taste. Let it simmer for anothe 10 minutes for the sweet corn to cook. Then add petchay and let it simmer for 1-2 minutes. Remove from the heat and ready to serve. Enjoy!
