1 kg Prawns, deveined
1 can (2 cups) Coconut milk
2 small Potatoes, sliced
1 small Carrot, sliced
1 – 2 tbsp. mild Curry powder
1 Onion, chopped
4-5 cloves Garlic, minced
1/2 green or red Bell pepper, sliced
2 tsp. Ginger, minced
Salt and Pepper to taste
Oil for sautéing
1) Pre-heat oil and sauté garlic, onion till soft then add ginger. Add coconut milk, water, curry powder, powder and pepper. Season with salt according to your taste. Mix it well.
2) Then add potato and carrots and let it simmer for 5-10 minutes on a low heat.
3) Once the potato is soft, add the prawns and bell pepper. Continue to simmer for 3-4 minutes then turn the prawns over and continue to cook for another 3-4 minutes. Do not over cook the prawns.
4) Once the sauce thickens, remove from the heat and now ready to serve. Best serve with rice
