Salt and Chilli Squid

Ingredients:

500g Squid, sliced in halves then cut into rectangle

1 small Carrot, slice into strips

2-3 Spring Onions, slice into strips

1 big Onion, sliced

1 red Chilli pepper, sliced

Salt and Pepper to taste

Oil for frying

For batter:

1/4 cup Plain Flour

1 Egg, beaten

1/2 cup Cornstarch

3/4 cup water

Salt and Pepper to taste

Procedures:

  1. For the batter, combine cornflour, egg and water in a mixing bowl. Season with salt and pepper to taste. Mix it well and set aside.Dry the squid using paper towels. Set aside.
  2. For coating, dip the squid in plain flour ensure to cover the squid with flour evenly. Dip it in prepared batter.
  3. Pre-heat oil in a small sauce pan for deep frying.
  4. Fry the squid in a low heat. Be careful with the hot oil as it will splash.
  5. After 3-5 minutes turn over the squid to cook on the other side for another 3-5 minutes on a low heat.
  6. Once the squid are golden brown, remove from the heat and transfer in a plate with paper towel to absorb the excess oil. Set aside.
  7. Pre-heat oil in a separate pan. Sauté onion and carrot strips. Once cooked, add spring onion and chilli pepper.
  8. Season with salt and pepper to taste. Then add the fried squids. Mix it well then remove from the heat. Ready to serve.
