2 big Eggplant, sliced diagonally
2 pcs. Eggs
Salt and Pepper to taste
1 – 2 Chilli Paste (adjust according how spicy you want it)
1 pc. Onion, finely chopped
5 – 6 pcs. Garlic, minced
2 pcs. Tomatoes, sliced
1 – 2 tbsp. Soy sauce
Oil for frying
Chopped spring Onion for garneshings (optional)
1) Pre-heat oil in a pan. Beat eggs and season with salt and pepper. Dip the eggplant in egg and fry the eggplant till cooked and golden brown on a medium heat. Remove from the pan then set aside. Set aside excess eggs.
2) Pre-heat oil in the same pan. Sauté onion, garlic and tomatoes till soft and translucent. Add the fried eggplant and excess eggs.
3) Add chili paste (sambal oelek) and season with soy sauce and pepper adjust according to your taste. Continue to sauté till the eggplant is well cooked. You can add the spare eggs and mix it well. Transfer in a platter and sprinkle the chopped spring onion for garneshing. Best serve with rice. Enjoy!
