Sipo Egg is a Chinese cuisine but the Filipino version this recipe originated in Pampanga and they added cream in this recipe. This dish has a rich thick creamy sauce with shrimp, quail eggs, and vegetables such as carrots, sweet corn and green peas.
- Melt the butter in a pan. Sauté onion till soft. Add garlic and continue to sauté till the aroma of garlic comes out.
- Add luncheon meat cubes, mushrooms and shrimps. Sauté for 1 minute.
- Add all the vegetables, all purpose cream, boiled quail eggs and season with salt and pepper to taste. Cover and let it simmer for 2 – 3 minutes on medium heat.
- Transfer in a serving bowl. Garnish with cashew nuts in top before serving. Enjoy!
