Creamy Sipo Eggs
Sipo Egg is a Chinese cuisine but the Filipino version this recipe originated in Pampanga and they added cream in this recipe. This dish has a rich thick creamy sauce with shrimp, quail eggs, and vegetables such as carrots, sweet corn and green peas.
Servings: 8 -10
Ingredients
- 2 dozens Quail Eggs hard boiled
- 1 can Luncheon Meat
- 1 cup Mushroom Button
- 5 - 6 cloves Garlic
- 1 pc. Onion
- 100 g Hipon
- 1 cup All Purpose Cream
- 1 pc. Carrot cut into cubes
- 2 stalks Celery
- 1 cup Green peas
- 1/2 cup Sweet Corn Kernel
- 3 tbsp. Butter
- Salt and Pepper to taste
- Cashew Nuts for toppings
Instructions
- Melt the butter in a pan. Sauté onion till soft. Add garlic and continue to sauté till the aroma of garlic comes out.
- Add luncheon meat cubes, mushrooms and shrimps. Sauté for 1 minute.
- Add all the vegetables, all purpose cream, boiled quail eggs and season with salt and pepper to taste. Cover and let it simmer for 2 - 3 minutes on medium heat.
- Transfer in a serving bowl. Garnish with cashew nuts in top before serving. Enjoy!
