Caldereta or Kaldereta has different variations using beef, pork, chicken and seafood. It is meat stewed in vegetables and liver spread. Plus, a touch of heat and saltiness from the cheese.
1 kg. King Prawns, deveined
3/4 cup Tomato Sauce
1 1/2 cups Water
1 pc. Onion, chopped
4 – 5 cloves garlic, minced
1 pc. Tomato, sliced
2 tbsp. Soy sauce (adjust according to your taste)
1/2 tsp. Pepper
1 can Liver spread
1/2 cup Pitted Olives (or more)
1/2 grated Cheddar cheese
Bell pepper sliced into strips
Oil for sautéing
1 tbsp. Cornstarch dissolved in 2 tbsp. water to thicken the sauce (optional)
- Pre-heat oil in a pan. Sauté garlic and onions till soft and translucent.
- Add tomato sauce, water, liver spread and grated cheese. Simmer till the sauce thickens a bit.
- Season with soy sauce and pepper according to your taste.
- Add shrimps, pitted olives and bell pepper. Let it simmer for 5 minutes. Add cornstarch slurry to thicken the sauce. Simmer for another 2 – 3 minutes. Remove from the heat and ready to serve. Enjoy it with rice.
